The news continues to be negative about our economy, as we learn of more businesses closing, more people being laid off, more homes going into foreclosure. It can really get you down, even if you aren’t personally suffering through it. We all see the effects of this economy all around us. Many of you may be asking yourselves, ‘what can I do about it?’Here is what one woman has done about it. Her name is Cinda Baxter, and she has started a website and blog that promote her concept. It’s called The 3/50 Project, and what she suggests is that we all support our community by literally shopping in it. Support your local markets, stores, gas stations, etc.

The 3/50 Project encourages you to pick three local, independently owned businesses that you’d miss if they closed, and commit to spending $50 a month in those businesses. Consider this staggering impact: $42.6 billion in revenue would be generated if only HALF the population followed through. ZIPLOC OMELETS

Have guests write their name on a quart-size ZIPLOC freezer bag with permanent marker. Crack 2 eggs (not more than 2) into the bag and shake to combine them. Each guest adds prepared ingredients of choice to their bag and shakes it up. Make sure to get the air out of the bag and zip it up. Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water. Open the bags and the omelet will roll out easily.

Upcoming event and YouTube

We are traveling to Colorado for the Holiday to spend time with our son and his family. I love Easter. I think of it as the “refreshing” holiday.
